The most authentic and famous Shanxi aged vinegar is produced in Qingxu County. Qingxu County is known as the "Chinese Vinegar Capital" and is the core production area of Shanxi aged vinegar, with a vinegar brewing history of more than 3,000 years.
Characteristics of Qingxu aged vinegar:
- It adopts traditional solid-state fermentation technology , with sorghum, barley and peas as the main raw materials, combined with unique processes such as sun-drying in summer and ice-fishing in winter , to make it taste sour but not astringent, with a mellow and sweet aftertaste .
- It has a high content of amino acids and organic acids , rich flavor and high nutritional value.
- The wine is aged for a long time, usually 3-5 years or even longer , to make it more mellow.
6° first-stage aged vinegar refers to Shanxi aged vinegar with an acidity of 6% and brewed using the first-stage process , which is usually of higher quality.
What is "first-grade vinegar"?
"First-class vinegar" refers to the first batch of fermented vinegar, which retains the richest nutrition and flavor. Compared with ordinary vinegar, first-class vinegar has a higher amino acid content, a mellower taste and a longer aftertaste .
Characteristics of 6-degree aged vinegar
- Acidity : 6% (i.e. 6g of acetic acid per 100ml), which is richer than the normal 4.5%-5%, and is suitable for seasoning and dipping.
- Aging time : usually more than 3 years , or even longer, through processes such as sun drying in summer and ice scooping in winter to make it more mellow.
- Raw materials : Sorghum, barley and peas are the main raw materials, using solid-state fermentation technology, and does not contain chemically synthesized acetic acid.
